5 Yummy Summer Recipes for the Whole Family

When you have a lot of mouths to feed, it can be hard to come up with new and exciting meals that the whole family will enjoy. With summer well under way, there are lots of opportunities for BBQs and picnics, but what about the simple summer dishes that can be made from the comfort of your own kitchen?

Here are 5 yummy summer recipes for you to try and enjoy with your whole family:

Flatbread Pizza


  • 1 tbsp. olive oil
  • 6 sliced mushrooms
  • 3 cloves of garlic
  • 1 x 12 inch flatbread base
  • 1 x 400g tin of chopped tomatoes
  • 2 balls of mozzarella
  • 100g smoked bacon


1. Heat together the tinned tomatoes, olive oil, garlic and any extra seasoning to taste on a low heat. Mash together the tomatoes until you have a smooth sauce, then simmer for 10-15 minutes.

2. Drizzle some olive oil over the flatbread and spoon the tomato sauce on evenly, leaving a centimetre border at the edges.

3. Cut the mozzarella balls into slices and places them across the tomato base. Cut the bacon into two inch strips and place on top of the cheese – fill any gaps on the pizza base with the mushrooms.

4. Pre-heat your oven to 200 degrees Celsius and then bake your flatbread pizza for 6 to 7 minutes or until the cheese has melted and is browning.

5. Serve and enjoy!

Summer Pea and Pancetta Pasta


  • 3 tbsp. olive oil
  • ½ juiced lemon
  • 3 cloves of garlic
  • 200g fresh peas
  • 400g tagliatelle
  • 200g pancetta
  • Grated parmesan


1. Bring a large saucepan of salted water to the boil and add the tagliatelle. Simmer for the recommended cooking time and add the peas for the final two minutes.

2. Gently sauté the pancetta and garlic in a small frying pan and cook until crisp and golden.

3. Drain the pasta and peas, place back into the pan, then stir in the rest of the ingredients, including the lemon juice and olive oil.

4. Plate up the pasta and add a sprinkling of parmesan cheese before serving.

Easy Fish Tacos


  • 220g pack of fish goujons
  • 4 tbsp. mayonnaise
  • Shredded iceberg lettuce
  • Juice of ½ a lime
  • 4 corn tortillas


1. Preheat oven to 220 degrees Celcius and bake the fish goujons for 12–15 minutes.

2. Warm the tortillas either for 15 seconds in the microwave or over a gas flame, until they are warm and crisp.

3. Lay one tortilla on a plate, and then add a couple of goujons, topped with some iceberg lettuce, a dollop of mayo and a squeeze of lime juice.

4. Season to taste and fold the tortilla at the sides and bottom, then pick up and eat with your fingers.

Turkey Burgers


  • 500g turkey mince
  • 85g grated cheese
  • 3 tbsp. olive oil
  • 4 soft bread rolls
  • Sliced cucumber
  • Tomato ketchup


1. Preheat your oven to 200 degrees Celsius while you prepare your burgers. Put the turkey mince in a bowl and mix in the cheese with some salt and pepper to taste.

2. Shape the mince mixture into 4 burger shapes, then put in the fridge to chill for 15 minutes.

3. Heat up a well oiled frying pan and then cook the burgers for 10 minutes on each side or until cooked through and golden.

4. Butter the rolls and put a few slices of cucumber on each. Pop the burgers on top and finish with a dollop of ketchup.

5. These burgers can then be served with either a salad or chips.

Pork and Halloumi Kebabs


  • 600g cubed pork loin
  • 2 blocks of halloumi
  • 4 cloves of crushed garlic
  • 2 tbsp. olive oil
  • Juice of 3 limes
  • 3 tbsp. runny honey
  • Skewers


1. Mix the pork in a bowl with the crushed garlic, olive oil, lime juice and seasoning to taste. Place the pork in the fridge to rest for around three hours.

2. Thread the pork and chunks of halloumi alternatively onto the skewers and brush with honey until they are completely glazed.

3. Grill the kebabs on either a BBQ or griddle pan for 4-5 minutes until the meat is cooked and the cheese is a golden brown.

4. Serve with either a salad or some flavoured couscous for a delicious summer dish.
